This red wine is obtained from a selection of the native Raboso Piave grapes grown on Parcel #912 in our vineyards in the Carboncine – Roncade area. Long maceration, with ageing in chestnut and “Allier” oak for 36 months. Part of the wine is dried out in drying chambers for 3 months, with careful dosing during the blending process. Final bottle ageing for 24 months. Due to the typicality of the soil and the specific winemaking techniques deployed, here at Santomè we consider our Raboso ready to drink only after a long ageing period of 5 years (3 years in the barrel and 2 in the bottle). Only produced in the best years.
